Woohoo! I LOVE Snow Days!
I know, it seems crazy that I'd like my kiddos bored and stuck in the house, but a snow day isn't just for them. I work at the local High School, so when it's a snow day- I'm off with pay too!
So, yeah. I get time to get more stuff done around the house, and sometimes I even get a bit of time to read or knit or whatever else I want.
Well, since I don't want to have to mess with it, I'm going to be throwing all of this in the crockpot after breakfast and it will be ready by dinner (if I put it on low, that is).
Crock Pot Scalloped Potatoes and Ham
Throw in the crock pot (spray it with cooking spray first):
2 cups cooked ham, cubed
6-8 potatoes, washed and cubed
1/2 c chopped onion
1 c shredded cheddar (I like extra sharp)
1 can cream of chicken/celery/mushroom soup (whatever's on hand is just fine)
1 can of water
Just mix it all up in the crock pot and let it go. If you want to be healthy (and happen to have it) you can serve this with a simple salad, or a few biscuits/rolls, etc.
This is one of those no-fuss meals that is just hearty enough to fill everybody up after a cold day and you just about can't mess it up, so this is good for my teenager to get going for me when I'm not feeling too hot.
Then you can all hang out on the couch with soup mugs full and watch movies. Yeah. It's like that.
